Oh. My. Goodness. Isn't this frosting pretty?! I made this for my Fairy Godmother's best friends birthday. She loves chocolate, and instead of making this a double chocolate cupcake, I decided to use up some of my frozen blackberries I picked during the summer. I was a little nervous to put berries in a frosting, but it worked out just fine!
Blackberry Frosting
- 1/2 cup butter, softened
- 1/2 cup fresh blackberries
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 (16-oz.) package plus 1 cup powdered sugar
- Beat first 5 ingredients at medium speed with an electric mixer until creamy. Gradually add powdered sugar, beating at low speed until blended and smooth after each addition.
- Note: Be sure to wash and thoroughly dry blackberries before adding to frosting.
At first, I wasn't sure if I wanted to put the whole berry in the frosting or just the juice. After trying it with just the juice, I felt like it needed a little more of something. Once the seeds were put in, it made it look more like a berry and added the little dots to it.
Now, for the cupcake. I'm really not a fan of cupcakes at all. I feel like they are dry (unless you buy store bought cupcakes), and kind of boring. This is my favorite recipe for a chocolate cake or cupcake. Unfortunately I didn't think to make this one until after I made the batter for the other cupcakes. I thought it was a little disappointing. This recipe below is moist, chocolate-y, oh so delicious and the recipe I should have used!
Emergency Chocolate Cake
2 cups flour
1 cup sugar
1/4 cup dutch-processed cocoa powder (I used coca powder from Trader Joe's)
2 teaspoons baking soda
1 cup mayonnaise (yes, mayonnaise! It makes it moist and I promise you can't taste the mayonnaise!)
1 cup water
1 teaspoon vanilla extract
Preheat oven to 350 degrees. Lightly coat 8 inch square cake pan with butter.
Whisk the flour, sugar, cocoa, and baking soda together in a large bowl. In a separate bowl, whisk the mayonnaise, water and vanilla together. Stir the mayonnaise mixture into the flour mixture until combined.
Scrape the batter into the prepared pan and smooth top. Bake until a wooden skewer inserted into the center of the cake comes out with a few crumbs attached, 35 to 40 minutes.
Let the cake cool for 1 to 2 hours and serve.

The Dwarfs loved this and all my co-workers seemed to like this a lot too! Especially the frosting! :)
