New York Cheese Cake with Lemon Curd

Yeah, yeah, yeah, I know, I've had a lot of lemon recipes on here lately, but we just happen to have a lot of lemons laying around the house, and I just happen to love lemon anything! Since I had left over lemon curd from making scones, I decided to share with you my other favorite way of eating/using lemon curd.
I had a little help making this dessert from my niece, Rapunzel. She was having a bad day (she was just told she couldn't pet a stray cat by our church) and was crying and sniffling in a corner by herself. After she explained what happened and why she couldn't touch the cat, there wasn't much I could say to cheer her up...that is until I said the magic words 'Girls. Night.' All her problems instantly went away with those two words. No more big tears, no more thoughts of the stray cat, just excitement for a girls night!
Before we got to watching a Tinkerbell movie with our ice cream, we made my grandma's (her great grandma) New York Cheese Cake recipe! This is the first time I've ever made it, but it turned out so good! This is not one of the Dwarfs favorite desserts. I don't think any of them really like cheese cake, but the Princesses do, so this recipe was mostly for them and the visitors we had over!

New York Cheese Cake

3 lbs cream cheese
1 1/4 sugar
3 large eggs, beaten
1 1/2 tsp. vanilla
3 Tbls. cornstarch
1 1/2 cup sour cream

Preheat oven to 400. Beat cream cheese and sugar together until smooth and light. Beat in eggs, vanilla and cornstarch only until smooth. Add sour cream and stir until well blended. Bake for 45 minutes. Leave in oven with heat off and cool with the oven door propped open 3 hours.
